Today, let me show you a place you can stop for eat while on the way to Kenting – Shuidiliao Century-old Eel Noodles 水底寮百年老牌鱔魚麵 – almost a century-year-old restaurant in Fangliao.
Founded in the Showa era, the ‘Shuidiliao Century-old Eel Noodles’ has been passed down to the 3rd generation, the same 3d generation as this nearby Ironworks Workshop. From a small stall in 1937 to owning its own storefront now, the craftsmanship was learned from the great-grandmother, and the father also quit his Taiwan Sugar Corporation job to specialize in selling eel and squid noodles.
“In the past, it was all soup. Fried eel noodles started with my father. The braised noodles use a clear braising method with three types of vinegar; lacking any flavor is not right”, says the boss.
After the third generation, Yang Longde 楊隆德 took over and moved to the current new address. Initially, it was in the old vegetable market, then moved to Sanjiaoyong, then across from the police station, and then moved here about three to four years ago after a neighbor’s gas explosion.
The eldest brother once opened a shop selling eel noodles in Kaohsiung and also learned the secret recipe for ‘Fragrant Crispy Eel Bones 香酥鱔魚骨’ from a nearby peer, ‘I was greatly surprised when I tried it that time. It took many visits before they allowed me to learn the secret. Moreover, now most of the eels are imported, and you need to reserve in advance if you want to eat eel bones.
The elder brother recalls catching eels in the paddy field ditches as a child, and the scenario of on-the-spot killing at the stall is no longer seen in this era. Still, the memories on the dining plate definitely come from the olden flavor.
